Historical particularities of the jerky

The introduction of the jerky in Cuba was made in the 18th century to feed the black slaves from Africa, who worked in the cultivation of sugar cane. This jerky was imported to Cuba from Brazil and Uruguay. The meat that was used in ancient times was scraps and very low quality meat, so its texture was dry, fibrous and with a peculiar smell of cured meat. Despite this, because it does not require refrigeration and because of its nutritional qualities and pleasant flavor, the consumption of jerk meat spread to rural communities and later to cities. This meant that over the years this dish, very rich in protein and with a characteristic flavor, took root in the less fortunate population and that, due to its peculiarity in its conservation and easy handling in the kitchen, it became a typical and traditional dish. in Cuban culinary culture.

When Cuba stopped importing this product, many families learned to make homemade beef jerky, salting and drying the meat in the sun, in different ways, until private individuals were prohibited from slaughtering cattle. That is one of the reasons why horse meat began to be used to make jerky on the island. The main way to consume this jerky was in the form of a club since the jerky was very hard and had to be boiled. and then hit it hard with a mallet or club to soften and fray it. Also, the beef jerky was an important ingredient of the Cuban ajiaco, very famous at that time.
